Chicken is inexpensive and easy to make, but sometimes we all get into a rut and make the same chicken recipes over and over again. This Herbes de Provence dish is simple to make, but the pan sauce adds a flavorful decadent note.
How to make Chicken Herbes de Provence with pan sauce?
Just a few steps and ingredients and about twenty minutes is all it takes to make this chicken recipe.
Salt & pepper your boneless skinless chicken thighs. Pan sear the chicken for about 4 minutes per side. Remove from the pan and set aside. Then deglaze the pan with chicken broth. Add Herbes de Provence, Minced garlic, and a squeeze of lemon juice!
Cook until reduced by at least half. Remove from the heat.
Add butter. Stir to melt butter. Sauce will thicken and become creamy as the butter melts. Add chicken back into the pan to glaze and reheat. And there you have it! A simple and easy dinner prepared in about 20 minutes. Serve with a simple salad and a bit of bread!

Each of the herbs in this herb blend have notes that combine and complement each other. Rosemary’s evergreen flavor is said to have notes of lavender, while thyme’s unique flavor is earthy with notes of rosemary. Savory adds a robust, peppery flavor. Lavender has a slightly floral flavor with an earthy slightly minty flavor similar to notes found in rosemary.

Does this recipe work with chicken breasts?
Yes!
Chicken breast is leaner and dries out faster than thighs, so we prefer to use chicken thighs. If chicken breasts are more appetizing to you, then feel free to use them instead. Whether using thighs or breasts, be sure to cook your chicken to 165°F – or when pierced, the juices that run out are clear and not pink.

Season boneless skinless chicken thighs with salt and pepper.

Heat olive oil in a skillet over medium heat until a water dropped in the oil sizzles. Add thighs to a hot skillet.

Cook chicken until browned and just cooked through-- about 4 - 5 minutes per side. Remove from skillet and set aside.

In skillet over heat, deglaze pan by adding 1 cup chicken broth. Scrape up the browned bits of chicken from the bottom of the pan before adding 2 tablespoons Herbes de Provence, 1 teaspoon Minced garlic, and a squeeze of lemon juice.

Add 2 tablespoons of butter. Stir to melt. Add chicken back into the pan to glaze and reheat.
