  1. Make the saffron sumac syrup: Using a mortar and pestle, grind the saffron with two tablespoons of sugar. In a saucepan, combine 1 cup water, remaining sugar, and the saffron/sugar mixture. Heat until sugar dissolves. Remove from heat and stir in sumac. Steep for 15-30 minutes. Strain and chill.

  1. To serve: Combine chilled sumac saffron syrup with club soda or water. Serve over ice.
