The spinach is cooked until tender and silky, garlic adds a deep savory flavor, while the walnut dukkah adds an amazing crunch and nutty spice flavor, and the yogurt sauce drizzled on top adds a bright lemony flavor. This is a healthy vegetable side dish you’ll crave – we’ve even been known to eat it straight out of the pan!

What Is Dukkah?
Dukkah is an Egyptian spice and nut blend of coarsely chopped nuts and spices traditionally served with olive oil and bread for dipping at breakfast time. Also known as Duqqa or Dukka, this blend has traveled around the world as its uses have been creatively expanded. It’s lovely as a crust for fish, or a topping for soups, salads, or sautéed spinach!

Produce.
Spinach.
This recipe is really best made with a hearty mature spinach as it holds up to sautéing without turning to mush. If baby spinach is what you have, be sure to just barely wilt it down and not let it overcook.
Lemon.
The sour of the lemon mixed with the yogurt balances out the earthiness of the spinach and nuts.
This dish calls for 1 ½ teaspoon lemon zest as well as 1 tablespoon lemon juice which should be the zest and juice of one lemon. Be sure to zest the lemon first as after you squeeze out the lemon juice it’s extremely difficult to zest a lemon.
Yogurt.
Use a thin unsweetened and unflavored yogurt for this dish. Greek yogurt will not work as it is too thick to drizzle over the finished dish.

Dukka Sauteed Spinach with Yogurt Sauce
Ingredients

Combine yogurt, lemon zest, ½ teaspoon Pacific Flake Sea Salt, and 1 teaspoon lemon juice. Set aside.

Lightly crush dukkah seasoning. Set aside.

Heat 2 teaspoons of Extra Virgin Olive Oil over high heat until it shimmers. Add spinach, 1 handful at a time, stirring and tossing each handful to wilt slightly before adding more. Cook, stirring constantly, until wilted – about 1 minute.

Transfer to a colander, squeeze between tongs to release excess liquid. Allow the spinach to continue draining while moving forward with the recipe.

Wipe the skillet dry. Add remaining 2 teaspoons of Extra Virgin Olive Oil to the now-empty pan and cook over medium heat until fragrant, about 30 seconds. Add nuts, dukkah seasoning, and garlic. Stir until coated with oil. Add spinach and stir until coated with oil and seasonings.

Remove from the heat. Transfer to a serving platter and drizzle with yogurt sauce!
