It turns out adding the smoky fruity heat of Chipotle Chile Peppers to peanut butter rice krispy treats is one of those wins. Chipotle’s flavors add a nice balance to the sweetness and nuttiness of peanut butter rice krispies.

Making rice krispy treats is pretty straightforward and easy, but we do have just a few hints and tips to make the process foolproof!
Should I use Large or mini marshmallows – or marshmallow cream to make my Rice Krispy Treats?
We prefer using mini marshmallows – just because! But if you prefer a different kind of marshmallow base, here are the substitutions to use for the classic rice krispy recipe.
1 cup of mini marshmallows = 8 large marshmallows = 5 ounces of marshmallow creme
Should I use chunky or smooth peanut butter to make my Rice Krispy Treats?
Either will work! We are team chunky peanut butter, but smooth works just as well. As when cooking anything, feel free to switch up ingredients according to your taste!
My Rice Krispy Treats turned out hard instead of gooey. Why?
Rice Krispy Treats can turn hard when the marshmallow and butter mixture cooks for too long. As soon as the marshmallows melt into the butter, remove the mixture from the heat.
Are Rice Krispy Treats Vegan?
The traditional homemade rice krispy treat recipe is not vegan. But it is easy to change this recipe up to a vegan recipe. See our ingredients list below for the simple substitutions.
Marshmallows. As mentioned in the FAQ, feel free to use the marshmallows of your choice. If you want to make vegan rice krispy treats, be sure to use vegan marshmallows which are made with seaweed carrageenan or soy protein instead of an animal derived gelatin.
Butter. When cooking and baking, we usually suggest using unsalted butter. In rice krispy treats where sweet is the predominant flavor, the extra bit of salt in salted butter works. Again, this is an ingredient that needs adjusting if you are making vegan rice krispy treats. Substitute a vegan butter or coconut oil.
Peanut Butter. Use your favorite peanut butter!
Rice Krispy Cereal. We know this recipe is from a big-brand cereal company, and yet, any brand of cereal will work!
Seasonings.
Chipotle Morita Chile Powder. Chipotle Morita Peppers are jalapenos that have been left on the vine until they turn red. After harvest, they are smoked over oak fires.
These richly flavored chiles have notes of cherries, raisins, and chocolate and are deeply smokey. With just a mild heat, but lots of smoky fruity flavor, this chile powder just shines in this recipe!
Vanilla Extract. Vanilla Extract adds an extra layer of flavor to this recipe. As with any recipes which have just a few ingredients, be sure to use really good ingredients. Pacific Flake Sea Salt. Oftentimes desserts are just sweet. Adding just a bit of salt helps to balance out the sweetness.

Let’s get cooking!
Use 1 tablespoon of butter to butter a 9 x 13 inch baking dish
Melt the remaining butter in a large saucepan over low heat
Stir in the Chipotle Powder, salt, and vanilla extract.
Add peanut butter and stir until smooth.
Stir in marshmallows. Stir just until melted and remove from heat.
Add rice krispy cereal, and quickly stir together.
Spread into a buttered pan. Use a square of waxed paper to press down the rice krispy treats.
Let set for 15 - 30 minutes.
Cut into your desired size squares!
